Ahh, breakfast…who doesn’t love breakfast? Eating a healthy breakfast can set you up for success all day. If you skip breakfast, you may end up eating too much later in the day, or you may find it hard to focus on the amazing things you do each day. 

Luckily, you can make a healthy high-protein vegan breakfast in just 10 minutes. And, if you’d like, you can make this a vegan meal-prep recipe. The tofu “eggs” can be kept in sealed containers in the fridge for five days. 

This vegan tofu scramble recipe stuffs you with protein and fiber for a great morning start. However, this vegan recipe is also a great quick dinner too!

The best tofu to use is “firm.” It should hold its shape but still have some moisture in it. If you use the Trader Joe’s tofu, the pink package is the best for scrambles. 

I love to add veggies to my scrambles to add fiber and nutrients. You can mix it up, but for this recipe, I used tomatoes, zucchini, kale, and a green onion.

When cooking the tofu, let a bit of the moisture cook off before seasoning it. I wait until it is steaming a lot in the pan (just takes a couple minutes), then I mix it up, throw in the spices, and mix it up some more. You can cook the veggies separate or you can cook them in the same pan.

The yellow color of the tofu scramble comes from the turmeric powder. I recommend using the powder instead of fresh grated turmeric. The fresh turmeric is stronger in flavor and will make the vegan “eggs” taste like turmeric. 

When cooking, the scramble is done once the seasonings are well mixed and the tofu scramble has an egg-like texture. It should be slightly moist and a bit bouncy (like eggs).

A healthy protein-packed vegan breakfast that is ready in 10 minutes! Pair this tofu scramble with a load of veggies and a bagel for a filling and satisfying vegan meal.

    Ingredients

    • 1 block (16 oz.) Firm Tofu
    • 1 TBSP nutritional yeast
    • 1/2 tsp turmeric powder
    • 1/2 tsp onion powder
    • Salt & pepper to taste

    Directions

    Use your hands to crumble the tofu into a heated non-stick skillet (on medium heat). Make the crumbles 1/2 to 1-inch pieces to resemble scrambled eggs.

    Let the tofu steam and cook for a couple minutes, mixing occasionally to prevent sticking. Add the spices and mix well until the tofu has turned a consistent yellow.

    When done cooking, the tofu scramble should still have a bit of moisture and be a bit bouncy in texture. Adjust salt and pepper to taste, if necessary. 

    Serve with veggies, a bagel, or toast! Enjoy =]
