Portobello Mushroom Steaks are an easy and delicious baked vegan dinner that is high in fiber and full of flavor! This mushroom steak recipe is ready in under 45 minutes. Pair this vegan steak with mashed potatoes and veggies or add it to a burger bun for a low calorie veggie burger.
Ingredients for Mushroom Steaks
- 2 portobella mushrooms will amount to a single serving. Each portobella mushroom is only 20-30 calories each! This recipe is set up for 2 servings (4 mushrooms).
- Vegetable broth
- Soy sauce. Can be substituted with gluten-free tamari or coconut aminos.
- Balsamic vinegar
- Vegan Worcestershire sauce (make sure it does not contain fish because it is traditionally made with anchovies)
- Fresh herbs, such as rosemary and thyme
- Fresh garlic, but can substitute with 1/4 the amount with dried garlic powder or granules.
- Dried herbs and spices: onion powder, Italian herb blend, and cracked pepper.
- I just use a little bit of avocado oil, but it can be omitted if following an oil-free plant based diet.
How to Make Portabella Mushroom Steaks
Making mushroom steaks is as easy as 1-2-3!
- Mix the vegetable broth, soy sauce, balsamic vinegar, and other seasonings into a large baking dish, like as a lasagna pan.
- Add mushrooms to the baking dish, stem-side-up, then spoon some of the seasoning mixture onto the inside of the mushrooms.
- Bake at 375 F (190 C) for 20 minutes, flip, and bake another 10-15 minutes. When they are easy to pierce with a fork, they’re ready to eat!

Ingredients
- 4 large portobello mushrooms
- 2/3 cup vegetable broth
- 1/2 cup low sodium soy sauce or gluten-free tamari
- 1/4 cup balsamic vinegar
- 2 teaspoons vegan Worcestershire sauce
- 1 teaspoon oil, such as avocado or olive oil
- 4 fresh garlic cloves, minced
- 1 teaspoon onion powder
- 1 teaspoon dried Italian herb blend
- 1/8 teaspoon black pepper
- Fresh rosemary and/or thyme, for serving
Instructions
- Preheat oven to 375 F (190 C).
- In a large baking dish (like a lasagna pan or casserole dish), whisk together the vegetable broth, soy sauce, balsamic vinegar, Worcestershire sauce, oil, minced garlic cloves, onion powder, Italian herb blend, and pepper.
- Wash the mushrooms, pat dry, and place them stem-side-up in the baking dish with the sauce mix. Spoon some of the sauce over the inside of the mushrooms.
- Bake mushrooms for 20 minutes, flip, and bake another 10-15 minutes. Note: cooking time will depend on the size of the mushrooms. If you have smaller mushrooms, you may need to reduce baking time by at least 5 minutes.
- The mushrooms are cooked through when they are easily pierced with a fork.
- Pair these mushroom steaks with your favorite side dishes, like steamed veggies and mashed potatoes with gravy.
