You can use any mix of fruits and veggies you like, of course. I find that the key to eating enough veggies is eating the ones you like and not the ones you dislike. I chose to use romaine lettuce, kale and cabbage shreds, cucumber, carrot, red bell pepper, mango, and avocado. Make sure they are sliced thin for best results.
The cashew butter will make the nori sheets soft and soggy if it touches it. The trick is to lay down the lettuce as a barrier, then drizzle on the Miso Turmeric Cashew Butter.
Layer on all the fruits and veggies you choose to use, then roll up the wrap! I love using a rainbow spread of fruits and veggies because the colors make me happy =]
