This zucchini sandwich is so irresistible because of the balance of flavors and textures. Crunchy breaded zucchini pairs beautifully with rich marinara sauce for a cozy, Italian-inspired taste, while creamy hummus and vegan mozzarella add a boost of plant-based protein and keep every bite satisfying. Roasted red peppers add a smoky flavor that ties everything together. It’s a wholesome, flavor-loaded sandwich that feels indulgent while still being healthy and plant-based, with each sandwich coming in at under 500 calories!

The star of this sandwich recipe is the crispy baked zucchini. But, feel free to mix up the veggies in this sandwich to suit your taste. Some other options include mushrooms, tomatoes, and arugula. Here are the ingredients you will need for this delicious vegan sandwich: 

How to Make Crispy Zucchini

Making the breaded zucchini for this recipe is fairly simple. Just batter it, bread it, and bake it! Here are the steps to make it:

  1. Prepare the zucchini by trimming the ends and slicing it crosswise into long planks that are about 1/3-inch thick.
  2. Mix the batter by whisking together the chickpea flour, tapioca flour, and non-dairy milk.
  3. Make the breading by combining the panko breadcrumbs, spices, and nutritional yeast.
  4. Dip each zucchini slice into the batter, then into the breading. Make sure to fully coat the zucchini with both. 
  5. Arrange the breaded zucchini on a lined baking sheet so they aren’t touching. Spray with some oil, if using.
  6. Bake for 15 minutes, flip, and bake another 10 minutes. Note: the size of the zucchini will alter the baking time. Make sure to bake until gold and crispy. 
  7. Assemble the veggie sandwich by layering hummus, spinach, crispy zucchini, vegan mozzarella, and roasted peppers. Spread marinara sauce on the top piece of bread and place on the sandwich.

Storage and Reheating Tips

As with all breaded foods, the crispy zucchini will not stay crispy during storage. However, you can reheat in the oven at 400F (205C) or in an air-fryer for a few minutes to get it crispy again. 

You can chose to meal prep this recipe and store assembled sandwiches in sealed containers in the fridge for the week. They will still taste delicious hot or cold!

  3. In a medium mixing bowl, mix the batter by whisking together the chickpea flour, tapioca flour, non-dairy milk, and soy sauce.
  4. In a separate bowl, make the breading by combining the panko breadcrumbs, spices, and nutritional yeast. Mix well.
  5. Dip each zucchini slice into the batter first, and then dip into the breading. Make sure to fully coat the zucchini with the breading.
  6. Arrange the breaded zucchini on a lined baking sheet so they aren’t touching. Spray with some oil, if using.
  7. Bake for 15 minutes, flip, and bake another 10 minutes. Note: the size of the zucchini will alter the baking time. Make sure to bake until gold and crispy.
  8. Assemble the veggie sandwich by layering hummus, spinach, crispy zucchini, vegan mozzarella, and roasted peppers. Spread marinara sauce on the inside of the top piece of bread and place on the sandwich.
