Crunchy and delicious vegan onion rings that are gluten-free and guilt-free!

For the Onion Rings:

  • 1 large sweet onion
  • 1/2 cup chickpea flour
  • 2/3 cup unsweetened non-dairy milk (I used oatmilk)
  • 1 TBSP olive oil
  • 1 TBSP flaxmeal
  • 1 cup panko breadcrumbs (gluten-free if desired)
  • 2 TBSP tapioca starch
  • 2 tsp nutritional yeast
  • 3/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1/8 tsp pepper

For the “Secret Sauce”:

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Slice the onion into 1/2-inch rings. Keep the middle pieces to coat with breading too, they are delicious onion nuggets.

  3.  In a shallow dish, make the batter by partially mixing the chickpea flour, non-dairy milk, olive oil, and flaxmeal.

  4. In another dish, whisk together the breadcrumbs, tapioca starch, and seasonings to make the breading.

  5. Dip each ring into the batter from Step 3 and then the breading from Step 4. Place on a lined baking sheet. You may need 2 sheets, depending on the amount of onion you use.

  6.  Bake at 425 degrees Fahrenheit for 20-25 minutes. While the onion rings bake, mix the Secret Sauce ingredients in a small bowl until smooth.
