A little disclaimer, if you don’t have a mandolin slicer to slice the carrots, it may take a little longer than 30 minutes but it is so worth it anyways. This vegan smoked salmon recipe makes a lot of fishless “lox” so you can make a tasty bagel in no time for breakfast. Don’t forget to use silicone baking mats or non-stick baking paper to avoid burning the carrots.

One of my favorite foods is a hearty vegan sandwich, and this Smoky Tofu Sandwich is one of my go-to sandwiches (the other is the Tofu Banh Mi). Lucky for me (and you) it is quick and easy to make this recipe as an easy vegan meal prep for 4 tasty plant based sandwiches to have throughout the week.

Vegan Chickpea Salad recipe is a delicious plant-based alternative to chicken or tuna salad, plus it is high in fiber and other nutrients which makes it a healthy alternative. This is a super quick vegan lunch recipe that makes a great sandwich, wrap, or on a salad. I like to add a little hot sauce and pickles for a tangy kick. This chickpea salad is also really tasty on top of crispbread or rice cakes for a healthy snack!

These Chickpea Fajitas are one of my favorite plant based dinners because you can make it all on one baking pan, in just 20 minutes. To save even more time during clean-up, use a silicone baking mat to prevent sticking and cut the dishes time in half!

Quick and easy vegan Creamy Pumpkin Pasta (aka Pumpkin Mac and Cheese) is a cozy plant based dinner infused with fall flavors that everyone will enjoy. This vegan pasta recipe is great any time of year (not just Fall) because it conveniently uses canned pumpkin. Shake it up and add your favorite veggies and some vegan sausage for the ultimate meatless meal. This vegan dinner is actually not fried, so it is guilt free while still hitting the spot! For a higher fiber version, use brown rice prepared ahead of time or set up a rice cooker to do the work for you.
