Vegan Sausage and Rice is a quick and easy recipe that is ready to eat in 30 minutes and everyone will love it! In fact, you may want to double the recipe so you are sure to have leftovers.
All you need is a few delicious ingredients and half an hour! Because this vegan dinner is ready so quick, it is perfect for a weeknight meal.
You can choose any vegan sausage for this vegan dinner that you like. Italian sausage gives a bold flavor, while Kielbasa is a bit more mild and lets the flavor of the seasoned rice shine.
The best sausages are the ones you make yourself. However, homemade vegan sausages are quite time consuming. But, you can learn to make your own vegan sausages by following my recipe video.
When I use store bought vegan sausage, I like the Tofurky brand vegan sausages because they have so many good flavors to choose from!
The vegan sausage is great, but I think the star of this recipe is the rice. Seriously! The rice is so darn good! I use the vegan to make the broth to cook the rice in. This makes the rice taste like Rice-a-Roni’s chicken rice – but there are no animals harmed in this version! Plus, you get to control the amount of sodium you want to add. Win! Win!

Vegan Sausage & Rice
Vegan Sausage and Rice is a quick and easy vegan dinner recipe that is full of flavor! This vegan recipe also makes a great plant based meal prep recipe.

- 2 cups uncooked white rice
- 4 1/4 cups Vegan Chicken-less Broth (or regular vegetable broth)
- 1/2 lemon's juice
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 3/4 tsp cumin
- 1/2 tsp ground coriander
- 1/2 tsp Italian seasoning
- Pepper to taste
- 4 vegan sausage links
- 2 cups chopped spinach
- 1/4 cup chopped cilantro (for garnish)
Add the rice, broth, lemon juice, and seasonings to a deep skillet with a lid. Simmer for 20-25 minutes, until rice is tender and water has been absorbed.
Meanwhile, chop the sausage and saute a pan, until mildly browned, about 5 minutes.
Once the rice is cooked, remove from heat, fluff with a fork and add the sausage and spinach. Mix to combine. The hot rice should lightly cook the chopped spinach as you mix.
Garnish with fresh chopped cilantro before serving.
