Fried Rice makes a great vegan dinner or meal prep recipe. This plant-based recipe is also kid-friendly!

If you need to cook the rice before this recipe, make sure it has cooled before making this recipe. Otherwise, the rice will stick together and you’ll have sticky fried rice.

I am a big rice-eater, so I prep rice often. This way, I always have a quick meal (or snack) when I need it. 

The “egg” in this fried rice is just a simple tofu scramble. Tofu scrambled eggs are quick and ready in less than 10 minutes, you can check out my Tofu Scramble Recipe here. The tofu scramble is an awesome addition to vegan breakfast, but can also be used in many other recipes, like this one.

Tofu and edamame add protein to this simple vegan dinner, and they both add some great texture and flavor too!

Vegan “Egg” Fried Rice

Vegan “Egg” Fried Rice is a quick and easy vegan meal that is also perfect to meal prep for the week! This kid-friendly vegan recipe is simple and delicious. Give it a try!

    Ingredients

    • 1 Tofu Scramble Recipe (link in directions)
    • 1/2 onion, chopped
    • 2 garlic cloves, minced
    • 1 cup shredded cabbage
    • 1 cup frozen edamame or peas
    • 3/4 cup chopped carrot
    • 1/2 cup cashews
    • 2 cups cooked rice
    • 1/4 cup soy sauce

    Optional Add-Ins

    • 1/2 cup pineapple
    • 1/2 cup chopped bell pepper

    Directions

    Find the full tofu scramble recipe here. Cook the tofu scramble with the onions and garlic.

    Move the tofu scramble to one side of the pan. Add the shredded cabbage, edamame/peas, carrot and cashews to the pan. Cook on medium/high heat for 3-4 minutes, stir often to prevent sticking. 

    If you are adding the optional ingredients, add them in with the other vegetables.

    Mix in the rice and soy sauce and combine with the scramble and veggies. Stir frequently for 4-5 minutes until hot.
