I am eternally grateful that I do not have a gluten intolerance because I have not had a vegan bread that is good enough (still hoping it will happen, for those of you who cannot eat gluten).

The tempeh bacon recipe for this vegan BLT sandwich is simple, yet a bit time consuming because it needs to marinate for at least an hour. You can leave the tempeh in the marinade overnight or while you are at work or school. Then all you need to do is bake it for 25 minutes, and voila!

How To Use Vegan Tempeh “Bacon”
While the tempeh bacon recipe is the perfect item for a vegan BLT sandwich, the bacon can also be eaten with a tofu scramble, on a bagel, or even in a salad. It is just so good that it will bring any meal to the next level.
This vegan BLT sandwich recipe is a great lunch, dinner, or afternoon snack (if you’re a snacks are sandwich sized, like mine). You can also make large batches of the vegan tempeh bacon to freeze or keep in the fridge as a vegan meal prep for sandwiches or other recipes.

Vegan BLT Sandwich
A delicious vegan sandwich recipe to power you through the day. You can meal-prep the vegan tempeh bacon to have tasty BLTs all week long!

For the Tempeh Bacon
- 1 pack (6 oz) Tempeh
- 1/4 cup low sodium soy sauce
- 2-3 TBSP maple syrup
- 1 TBSP apple cider vinegar
- 2 tsp liquid smoke
- 1/2 tsp smoked paprika
For the Sandwich
- Toasted Sourdough Bread
- Vegan mayonnaise
- Romaine lettuce
- Tomato slices
- Optional: Avocado, peperoncinis
Slice the tempeh into strips. 1/2-1-inch wide and 1/4-inch or less thick.
In a shallow dish that can be covered, mix the soy sauce, maple syrup, apple cider vinegar, liquid smoke, and smoked paprika.
Place the tempeh strips in the marinade, cover, shake to coat, and refrigerate for at least 1 hour.
Preheat oven to 350F. Place marinated tempeh bacon strips on a lined or oiled baking sheet. Bake for 15 minutes, flip, and bake for another 10 minutes.
Assemble your vegan BLT on toasted sourdough bread with plenty of mayo, tomato slices, and lettuce.
Optional: add avocado and peperoncinis
