Nori Wraps with Miso Turmeric Cashew Butter

Miso Turmeric Cashew Butter? Trust me…it is so delicious and creamy – the perfect mix of sweet and savory. This sauce makes these raw vegan veggie filled nori wraps IRRESITABLE. Plus, turmeric is an awesome anti-inflammatory with tons of health benefits. So why not give this amazing recipe a try?!

You can use any mix of fruits and veggies you like, of course. I find that the key to eating enough veggies is eating the ones you like and not the ones you dislike. I chose to use romaine lettuce, kale and cabbage shreds, cucumber, carrot, red bell pepper, mango, and avocado. Make sure they are sliced thin for best results. 

The cashew butter will make the nori sheets soft and soggy if it touches it. The trick is to lay down the lettuce as a barrier, then drizzle on the Miso Turmeric Cashew Butter. 

Layer on all the fruits and veggies you choose to use,  then roll up the wrap! I love using a rainbow spread of fruits and veggies because the colors make me happy =]

Vegan Nori Wraps with Miso Turmeric Cashew Butter Recipe

For the Miso Turmeric Cashew Butter

  • 2 cups unsalted cashews
  • 2 TBSP coconut aminos (or substitute with 2 TBSP soy sauce + 2 tsp maple syrup)
  • 1 1/2 TBSP white miso
  • 1 tsp ground turmeric
  • 1/2 tsp ground ginger
  • 1/3-1/2 cup water

For the Nori Wraps

  • 10 Nori Sheets
  • Greens, such as Romaine
  • Shredded kale and/or cabbage
  • 1-2 avocados, sliced
  • 1 mango, sliced
  • 1 cucumber, sliced
  • 1/2 red bell pepper, sliced



To make the Miso Turmeric Cashew Butter, blend all ingredients in a blender until smooth.


Lay out a nori sheet and set down a layer of greens on the bottom third of the sheet. Drizzle some of the Miso Turmeric Cashew Butter over the greens.


Layer on the rest of the veggies. Try to keep them all on one half of the nori sheet.


Roll it up like a burrito, using your hands to keep veggies in place. Use a dab of water along the edge of the nori to seal it.

Enjoy immediately!
