This vegan recipe takes only 25 minutes with an Instant Pot, even counting the wait for the pressure to build up. If you don’t have an Instant Pot, worry not! You can easily Potato Masalas on the stove top in a deep skillet with a lid – just make sure to stir frequently to prevent sticking.

Vegan Potato Masala – Instant Pot or Stovetop Recipe
Vegan Potato Masala is a quick and delicious plant based recipe that is great for dinner or a weekly meal prep. Ready in under 30 minutes so you can spend more time on the important things!

- 5-6 medium potatoes, peeled & cut into 1 to 2-inch pieces
- 1 onion, chopped
- 1/2-inch ginger, grated or minced
- 1 tsp Garam Masala
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp turmeric powder
- Pinch of cayenne (optional)
- 3/4 tsp salt
- 1 cup water
- 1/3 cup chopped cilantro + extra for garnish
Preparing the spices
Add all the ingredients to the Instant Pot. Switch the settings to cook manually on high pressure for 4 minutes with the valve in the sealed position.
Quick release the pressure. Once the pressure is fully released, open the lid and gently mix in the cilantro.
Serve with extra cilantro as a garnish. This Potato Masala is great with warmed vegan Naan bread too!
