I say that most nights…lol. But who can resist with these fluffy delicious vegan waffles?!
No super fancy tricks to make these waffles fluffy, just some baking chemistry. Don’t be scared. It’s just apple cider vinegar and baking powder reacting…feel free to believe it’s all just magic – it’s way more fun that way ha!

Simply start by mixing all the dry ingredients – flour, baking powder, and flax…yup, whisk those 3 together and move on to the wet stuff.
Then mix the 2 together and watch the magic happen.

You should see the batter bubble a little bit – this reaction is what makes the waffles fluffy!
Feel free to add in a bit of extra stuff to this recipe. I love to mix in some pumpkin pie spice or vanilla. You could even add cocoa powder! Chocolate waffles!? Heck yes!

While your waffle is cooking in the waffle iron, you should prepare your toppings. Because let’s face it, plain waffles are boring!
I can never make waffles without adding on tons of berries. It’s more like I’m having a waffle with my plate of berries…not the other way around.
I just microwave frozen berries because it is way cheaper. Especially when you want to buy organic.

Fluffy Vegan Waffles

Ingredients
For the Waffles
- 1 1/2 cups flour
- 1 1/2 TBSP baking powder
- 1/3 cup ground flax
- 1 cup water
- 3 TBSP sugar
- 1 1/2 TBSP apple cider vinegar
- 1 1/2 TBSP melted coconut oil
Topping Ideas
- berries, sliced bananas, maple syrup, shredded coconut
Directions
Preheat waffle iron. In a large bowl, combine the flour, baking powder, and ground flax. Whisk to combine.
In another bowl, combine the water, sugar, apple cider vinegar, and oil.
Add the wet ingredients to the dry ingredients and mix well. The batter should bubble a little. This is what makes the waffle so fluffy.
Add about 1/2-3/4 cup of the batter to a heated waffle iron. Cook until golden. Remove from the waffle iron, start the next waffle.
Top the waffles with your favorite toppings! Enjoy!
