I will suggest having a good blender to get it ultra creamy & dreamy. But if you have yet to invest in a fancy blender, soak the cashews beforehand and do your best. 

I love this recipe because – in addition to being delicious – this vegan Alfredo is made with simple plant foods. Only 6 ingredients, plus a couple spices creates an easy vegan dinner in under 30 minutes. 

To make this simple vegan dinner a complete meal, add in lots of veggies. I love to heat frozen broccoli and peas to add to the pasta, but feel free to use whatever is your favorite, or whatever you have on hand.

The cashews and hemp seeds provide a creamy base, while the starches from the steamed potato thickens the sauce. Nutritional yeast add a touch of cheesiness. Then all you need is garlic, salt, and pepper for flavor! Easy peasy.

Since this plant based Alfredo sauce is gluten free, simply use gluten free pasta to make this a quick and easy gluten free vegan dinner!

Easy & Healthy Vegan Alfredo

    Ingredients

    • 1 cup chopped & peeled potato
    • 3-4 garlic cloves, grated or minced
    • 1 cup raw cashews
    • 1/4 cup hemp seeds
    • 1 1/2 cups unsweetened non-dairy milk
    • 2 TBSP nutritional yeast
    • 1/2 t salt
    • pepper to taste
    • 1 lb pasta

    Directions

    Add 1-inch of water to a small pot with the potato pieces. Bring to a boil and simmer, covered, for 5-7 minutes, or until soft. 

    Start boiling the pasta, according to package directions.

    In a small pan or pot, saute the garlic with a bit of water for 3-4 minutes, until fragrant.

    To a high speed blender, add the cooked potato and garlic. Add the remaining ingredients to the blender. Blend until very smooth and creamy.

    Once the pasta is cooked and strained, add the sauce and stir until the noodles are well coated with the Alfredo sauce. 

    Add in your favorite veggies and eat!
