Easy vegan taco recipe

Tacos have been a life saver when I am busy. They are so easy to make and can be made super healthy. Plus, they are ready to eat in 15-30 minutes, depending on the type of taco you are making and cooking them doesn’t make a lot of dishes!

This vegan taco recipe is made with whole plant foods, is gluten free, and tastes so so good! 

Oddly enough, cauliflower has become one of my favorite foods (potatoes being the other), it is so versatile and can be used in so many types of recipes – sauces, wings, sushi, tacos, and curries to name a few.

The ingredients you will need for the perfect plant based taco include onion, garlic, cauliflower, beans, corn, cilantro, and avocado of course! These simple ingredients will be lightly seasoned with turmeric, cumin, and salt to allow the natural flavors of the plant foods shine. 

Even though this recipe is fast and easy, it is still really healthy and full of fiber, folate, protein, healthy fats, and other vitamins and mineral your body needs. So there is no excuse to not eat healthy when you don’t have much time to cook =] 

30 minute cauliflower tacos

You can make this recipe fancier if you have time by adding in more veggies, like diced zucchini, spinach, or potatoes too. Tacos are a great meal to make when you have vegetables in the fridge that need to be used up, so use what you have and reduce food waste.

Cauliflower & Black Bean Tacos

Vegan Cauliflower Black Bean Tacos

    • 1/3 cup diced onion
    • 2 garlic cloves, minced or grated
    • 1/2 head cauliflower, chopped
    • 1 cup cooked black beans
    • 1 cup corn kernels
    • 1/2 tsp salt
    • 1/2 tsp turmeric powder
    • 1/2 tsp ground cumin
    • Corn tortillas


    • Cilantro
    • Avocado
    • Shredded cabbage
    • Hot Sauce



    Saute the onion and garlic with a bit of water for 3-5 minutes, stirring to prevent sticking. 


    Add the cauliflower and 2 tablespoons of water, cover and steam for 7 minutes. Check frequently to make sure it is not sticking. If it is, add a bit more water, mix, and turn the heat down. 


    Add in the black beans, corn, and spices. Mix well and cook for another 5 minutes, or until the cauliflower is soft and everything is hot. 


    Heat the tortillas and assemble your tacos however you like.
